




When it comes to Hakodate ramen, salt-based broth is the thing. I had the Golden Salt Ramen at Ryuho, a shop in Daimon Yokocho, which was also close to my lodging. It had been quite a while since I'd eaten ramen at a shop, and while I expected a light base, the broth had a solid depth and umami, pairing perfectly with the noodles. It was quite hot at 30 degrees Celsius, but I found myself finishing every last drop of the soup. It had been a while since I'd had salt ramen, and it was delicious.
